In Have will Travel not Hey Boy but rather an episode that dealt with the Tongs in San Francisco. Paladin must assist a policeman-detective who is Asian born. The detective resists any assistance even though his sister and his uncle implore Paladin to do so.

Charlie Wong, the owner of the malt shop in Dobbie Gillis, was played by James Yagi, who appears to be of Japanese origin.
I'm pretty sure he did not have a stereotype Asian accent.
